1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
Pinch of salt
1 cup soft caramels (or homemade caramel)
2 tablespoons heavy cream
1 1/2 cups dark or milk chocolate chips
1 teaspoon coconut oil or butter
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs and vanilla extract.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix into a smooth dough.
Shape the dough into rounds, flatten slightly, and place on the prepared baking sheets. Bake for 8–10 minutes. Let cookies cool completely.
In a saucepan or microwave, melt the caramels with heavy cream until smooth. Spread the caramel over half of the cookies, then sandwich with the remaining cookies.
Melt the chocolate chips with coconut oil or butter until smooth. Dip or spread over the tops of each cookie sandwich. Sprinkle with sugar for sparkle if desired.
Let cookies set at room temperature or chill briefly until firm.
