500g ground beef
Salt and black pepper, to taste
8 slices thick sandwich bread (Texas toast or sourdough)
1 large onion, thinly sliced
1 tbsp olive oil
4 slices cheddar cheese
4 slices mozzarella cheese
2 tbsp mayonnaise
½ tsp smoked paprika
½ tsp garlic powder
1 tbsp butter
Instructions
Heat olive oil in a skillet over medium-low heat. Add sliced onions and cook slowly for 15–20 minutes, stirring occasionally, until deeply golden and soft. Set aside.
Form the ground beef into 4 oval-shaped patties slightly larger than your bread slices. Season both sides with salt and pepper. Cook on a hot skillet or grill pan for 3–4 minutes per side until browned and cooked through. Set aside.
In a small bowl, combine mayonnaise, smoked paprika, and garlic powder. Spread the mixture onto one side of each bread slice.
On the non-mayo side of 4 bread slices, layer in order: 1 slice cheddar, 1 beef patty, caramelized onions, 1 slice mozzarella. Top with another slice of bread, mayo side facing out.
Melt butter in a skillet over medium heat. Grill each sandwich for 2–3 minutes per side, pressing gently with a spatula until golden and the cheese is melted.
Notes
Serve warm with a side of crispy fries, dill pickles, or tomato soup for a complete meal.
Feel free to mix different types of cheese for added flavor.
