Instructions

  1. Prepare the chicken by slicing a pocket into each chicken breast without cutting through completely. Season both sides with salt, black pepper, paprika, and garlic powder.
  2. Make the filling by lightly sautéing spinach until wilted, then transferring to a bowl to mix with cream cheese, mozzarella cheese, olives, cherry tomatoes, garlic, parsley, and chili flakes.
  3. Stuff each chicken breast generously with the spinach and cheese mixture, securing with toothpicks if needed.
  4. Heat olive oil in a large skillet over medium heat and cook the stuffed chicken breasts for 4-5 minutes per side until golden.
  5. Transfer the chicken to a baking dish and bake at 375°F (190°C) for 18-20 minutes until juicy and fully cooked.
  6. Make the garlic herb sauce by melting butter in the same skillet, then sautéing garlic until fragrant. Pour in chicken broth, lemon juice, and oregano, simmering for 2-3 minutes until slightly reduced.
  7. Serve by spooning the garlic herb sauce over the stuffed chicken breasts, garnishing with fresh parsley and extra cherry tomatoes. Serve hot with rice, roasted vegetables, or salad.
