2 large eggplants, sliced into thick rounds
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1 cup crumbled feta cheese
1/2 cup kalamata olives
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
1/2 cup Greek yogurt
1 tablespoon lemon juice
1 teaspoon olive oil
1 small garlic clove, minced
Pinch of salt and pepper
Red pepper flakes (for garnish)

Instructions
Slice eggplants into thick rounds and brush both sides with olive oil. Season with garlic powder, oregano, smoked paprika, salt, and black pepper.
Arrange eggplant slices on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping halfway through, until golden, tender, and slightly caramelized.
In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper until smooth and creamy.
Top each roasted eggplant round with crumbled feta cheese, cherry tomatoes, and kalamata olives. Sprinkle generously with fresh parsley and basil.
Drizzle the creamy yogurt sauce over the eggplant stacks. Finish with red pepper flakes and a light drizzle of olive oil for extra flavor.
Serve warm as an appetizer, side dish, or light Mediterranean-inspired meal with crusty bread or a fresh salad.
