- 2 tbsp olive oil
- 1 red onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium zucchini, sliced
- 1 small eggplant, diced
- 2 large tomatoes, chopped (or 1 can diced tomatoes)
- 1 cup vegetable broth
- 1 tsp dried oregano
- ½ tsp dried thyme
- ¼ tsp chili flakes (optional for a spicy twist)
- Salt and pepper to taste
- Fresh basil or parsley, chopped (for garnish)
- Heat olive oil in a large pot. Add diced onion and garlic, and cook until fragrant.
- Stir in bell peppers and eggplant. Cook for 5–7 minutes, allowing everything to soften.
- Add chopped tomatoes and zucchini. Cook for another 5 minutes.
- Pour in the vegetable broth, oregano, thyme, and chili flakes. Bring to a simmer and let it cook uncovered for 20 minutes.
- Ladle the hot soup into bowls and top with fresh chopped basil or parsley.
