  • 2 boneless skinless chicken breasts, cut into chunks
  • 2 medium zucchinis, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella (or Italian blend cheese)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp onion powder
  • Salt & black pepper to taste
  • Optional: chopped parsley or basil for garnish

Instructions

  1. Preheat oven to 400°F. Lightly grease a casserole dish.
  2. In a skillet, heat olive oil and cook chicken chunks with garlic until lightly golden.
