A refreshing and nutritious Mediterranean Chicken Pasta Salad, perfect for summer meals and meal prep.

Ingredients

  • 2 grilled chicken breasts, sliced
  • 2 cups cooked rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup baby spinach or arugula
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives (optional)
  • 2 tbsp fresh basil or parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt & black pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and oregano, then grill until juicy and golden.
  2. Cook your favorite short pasta until al dente, then rinse in cold water to cool it down.
  3. Dice cucumber, halve tomatoes, slice onion, and add spinach.
  4. Mix olive oil, red wine vinegar, Dijon mustard, and garlic for the dressing.
  5. Toss pasta, grilled chicken, veggies, feta, and dressing together. Top with fresh herbs and olives.

Notes

  • For a vegetarian option, omit the chicken and add more vegetables or chickpeas.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
