- 2 grilled chicken breasts, sliced
- 2 cups cooked rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup baby spinach or arugula
- 1/3 cup feta cheese, crumbled
- 1/4 cup Kalamata olives (optional)
- 2 tbsp fresh basil or parsley, chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar or lemon juice
- 1 garlic clove, minced
- 1 tsp Dijon mustard
- 1/2 tsp dried oregano
- Salt & black pepper to taste
- Season chicken breasts with salt, pepper, and oregano, then grill until juicy and golden.
- Cook your favorite short pasta until al dente, then rinse in cold water to cool it down.
- Dice cucumber, halve tomatoes, slice onion, and add spinach.
- Mix olive oil, red wine vinegar, Dijon mustard, and garlic for the dressing.
- Toss pasta, grilled chicken, veggies, feta, and dressing together. Top with fresh herbs and olives.
Notes
- For a vegetarian option, omit the chicken and add more vegetables or chickpeas.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
