- 2 slices sourdough or whole grain bread (toasted)
- 1 large egg (fried or poached)
- 2 tablespoons mashed avocado
- 3–4 cucumber slices
- Handful of baby spinach or arugula
- 2–3 sun-dried tomatoes (oil-packed, drained)
- 2 slices mozzarella or feta cheese
- 1 tablespoon herbed cream cheese (optional)
- Pinch of red chili flakes & dried rosemary (for topping)
- Salt and pepper to taste
- Olive oil for cooking
- Toast the bread until golden and crispy.
- Spread one slice with herbed cream cheese and the other with mashed avocado.
- Layer spinach, cucumber slices, and cheese on one slice.
- Fry or poach an egg with olive oil until the yolk is slightly runny.
