  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped (plus more for garnish)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 1/2 cups marinara sauce (store-bought or homemade)
  • 4 sub rolls (soft inside, crisp outside)
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, and seasonings. Form into meatballs (about 1.5 inches each).
  2. Heat olive oil in a skillet over medium-high. Sear meatballs on all sides until browned (about 5-6 mins).
  3. Pour marinara sauce into the skillet, cover, and simmer meatballs for 10-12 mins.
  4. Toast the sub rolls lightly, then layer with saucy meatballs and a handful of mozzarella.
  5. Place subs under the broiler for 2-3 mins until cheese is bubbly and golden. Sprinkle with fresh parsley and serve hot.
