500g ground beef
1 small onion, grated
2 garlic cloves, minced
¼ cup breadcrumbs
1 egg
¼ cup chopped parsley
1 tsp black pepper
1 tsp ground coriander
Salt, to taste
4 large potatoes, peeled & cubed
¼ cup butter
½ cup warm milk
Salt & pepper, to taste
2 tbsp olive oil
1 tbsp flour
1½ cups beef or vegetable broth
1 tbsp tomato paste
1 tsp paprika
Salt & pepper, to taste
Instructions
Combine beef, onion, garlic, breadcrumbs, egg, parsley, and seasonings in a bowl. Mix until combined, form into medium meatballs, and chill for 15 minutes to firm up.
Boil potatoes in salted water until fork-tender. Drain and mash with butter, milk, salt, and pepper.
Heat oil in a skillet, brown meatballs on all sides, then remove (they’ll finish cooking in the oven).
In the same skillet, add flour and toast lightly. Stir in tomato paste, broth, paprika, and seasoning until thickened.
Spread mashed potatoes in a baking dish, nestle meatballs on top, and pour the sauce over. Bake uncovered at 180°C (350°F) for 25–30 minutes until bubbly and golden.
Top with parsley and serve straight from the dish.
Notes
Make sure to chill the meatballs before cooking to help them hold their shape.
You can use leftover mashed potatoes if you have some on hand.
Feel free to add cheese on top before baking for a cheesy version.
