1 cup all-purpose flour
1 tbsp matcha powder (culinary grade)
1 tbsp baking powder
1/4 tsp salt
1 tbsp sugar or maple syrup
1 cup milk (dairy or plant-based)
1 ripe banana, mashed
1 large egg
1 tsp vanilla extract
2 tbsp melted coconut oil or neutral oil
Butter or oil for cooking
For Topping: 1 banana, sliced
Peanut butter, slightly warmed
Dark chocolate chunks
Blueberries, optional
Powdered sugar, for dusting
Instructions
In a bowl, whisk flour, matcha powder, baking powder, salt, and sugar.
In a separate bowl, mix milk, mashed banana, egg, vanilla, and melted oil until smooth.
Combine wet and dry ingredients, mixing gently just until combined. Let batter rest 5 minutes.
Heat a non-stick skillet over medium. Grease lightly. Pour 1/4 cup of batter per pancake and cook until bubbles form and edges look set. Flip and cook another 1–2 minutes.
Stack pancakes and top with banana slices, peanut butter drizzle, chocolate chunks, and berries. Dust with powdered sugar if desired.
