3 lbs chuck beef
2 tbsp olive oil
2 onions, thinly sliced
4 garlic cloves, minced
2 tbsp tomato paste
1 tbsp soy sauce
1 tsp thyme
1 tsp black pepper
2 cups broth
Salt to taste
2 lbs potatoes, peeled
4 tbsp butter
1/2 cup milk
Salt and pepper
1 cup grated cheese
Fresh parsley
Instructions
Brown seasoned beef in oil. Remove. Sauté onions, garlic, and tomato paste. Return beef, add seasonings and broth. Cook covered for 3–4 hours at 300°F until tender. Shred meat, reduce gravy uncovered.
Boil potatoes until soft, mash with butter and milk. Season.
Layer mashed potatoes in a bowl, add beef and gravy, top with cheese and parsley.
