A hearty and comforting Mashed Potato Bowl layered with slow-cooked beef, creamy mashed potatoes, and topped with cheese and fresh parsley.

Ingredients

  • 3 lbs chuck beef
  • 2 tbsp olive oil
  • 2 onions, thinly sliced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp thyme
  • 1 tsp black pepper
  • 2 cups broth
  • Salt to taste
  • 2 lbs potatoes, peeled
  • 4 tbsp butter
  • 1/2 cup milk
  • Salt and pepper
  • 1 cup grated cheese
  • Fresh parsley

Instructions

  1. Brown seasoned beef in oil. Remove. Sauté onions, garlic, and tomato paste. Return beef, add seasonings and broth. Cook covered for 3–4 hours at 300°F until tender. Shred meat, reduce gravy uncovered.
  2. Boil potatoes until soft, mash with butter and milk. Season.
  3. Layer mashed potatoes in a bowl, add beef and gravy, top with cheese and parsley.

Notes

  • Serve with a side salad or roasted veggies.
  • Try mashed sweet potatoes for a sweeter base.
  • Use dairy-free milk and cheese if needed.
