4 salmon fillets (skinless, ~6 oz each)
2 tbsp olive oil
Salt & black pepper, to taste
2 garlic cloves, minced
1/2 cup heavy cream
1/3 cup chicken broth
1/4 cup grated parmesan cheese
1/4 cup sun-dried tomatoes, chopped
1/2 tsp chili flakes (optional)
1 tsp Italian seasoning
1 tbsp fresh basil, chopped (plus more for garnish)
Instructions
Season salmon with salt and pepper. Sear in hot olive oil, skin-side up, until golden brown on each side—about 3–4 minutes per side.
Remove salmon and lower heat. Sauté garlic in the same pan until fragrant. Stir in cream, chicken broth, parmesan, sun-dried tomatoes, chili flakes, and Italian seasoning.
Let the sauce simmer gently for 3–4 minutes, stirring until it thickens slightly.
Nestle the seared salmon back into the skillet and spoon the sauce over top. Simmer 2–3 more minutes to let flavors meld.
Top with fresh basil and serve hot with mashed potatoes, rice, or crusty bread.
