Marry Me Chicken Soup is a creamy and comforting dish that combines shredded chicken, gnocchi, and a rich broth, perfect for a romantic dinner or cozy fall meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 lb cooked shredded chicken (rotisserie works great!)
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 (16 oz) package potato gnocchi
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach or chopped basil
  • Salt & pepper to taste
  • Optional: extra Parmesan + red pepper for topping

Instructions

  1. Heat olive oil in a large pot. Add garlic and sun-dried tomatoes, sauté for 2 minutes until fragrant.
  2. Stir in chicken broth, heavy cream, Italian seasoning, and red pepper flakes. Bring to a simmer.
  3. Add gnocchi and simmer for 3–5 minutes until they float and turn pillowy soft.
  4. Stir in shredded chicken and spinach (or basil). Simmer another 5 minutes.
  5. Turn off heat, stir in Parmesan cheese, and season to taste. Garnish with more cheese, red pepper flakes, and chopped basil if desired.

Notes

  • Pair with toasted bread for a complete meal.
  • Feel free to adjust the spice level by adding more or less red pepper flakes.
  • This soup can be made ahead and reheated for convenience.
