2 tablespoons olive oil
1 lb cooked shredded chicken (rotisserie works great!)
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
3 cups chicken broth
1 cup heavy cream
1 (16 oz) package potato gnocchi
½ teaspoon crushed red pepper flakes
½ teaspoon Italian seasoning
½ cup grated Parmesan cheese
1 cup fresh spinach or chopped basil
Salt & pepper to taste
Optional: extra Parmesan + red pepper for topping
Instructions
Heat olive oil in a large pot. Add garlic and sun-dried tomatoes, sauté for 2 minutes until fragrant.
Stir in chicken broth, heavy cream, Italian seasoning, and red pepper flakes. Bring to a simmer.
Add gnocchi and simmer for 3–5 minutes until they float and turn pillowy soft.
Stir in shredded chicken and spinach (or basil). Simmer another 5 minutes.
Turn off heat, stir in Parmesan cheese, and season to taste. Garnish with more cheese, red pepper flakes, and chopped basil if desired.
Notes
Pair with toasted bread for a complete meal.
Feel free to adjust the spice level by adding more or less red pepper flakes.
This soup can be made ahead and reheated for convenience.
