Zesty marinated cheese cubes with garlic and herbs, perfect for parties and snacks.

Ingredients

  • 8 oz block of mozzarella, Monterey Jack, or white cheddar, cubed
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon red wine vinegar (or lemon juice)
  • 2 garlic cloves, finely minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 2 tablespoons fresh parsley, chopped
  • Optional: 1 teaspoon fresh thyme or rosemary, chopped

Instructions

  1. Cut your cheese into 1-inch cubes and place in a glass container.
  2. In a bowl, combine olive oil, red wine vinegar, garlic, herbs, salt, pepper, and chili flakes.
  3. Pour marinade over the cheese, toss gently to coat. Cover and refrigerate for at least 4 hours (or overnight).
  4. Let cheese sit at room temp for 10 minutes before serving. Pair with crackers or bread.
  5. Store leftovers refrigerated in the marinade for up to 5 days.
