- 8 oz block of mozzarella, Monterey Jack, or white cheddar, cubed
- 1/4 cup extra virgin olive oil
- 1 tablespoon red wine vinegar (or lemon juice)
- 2 garlic cloves, finely minced
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon sea salt
- 2 tablespoons fresh parsley, chopped
- Optional: 1 teaspoon fresh thyme or rosemary, chopped
- Cut your cheese into 1-inch cubes and place in a glass container.
- In a bowl, combine olive oil, red wine vinegar, garlic, herbs, salt, pepper, and chili flakes.
- Pour marinade over the cheese, toss gently to coat. Cover and refrigerate for at least 4 hours (or overnight).
- Let cheese sit at room temp for 10 minutes before serving. Pair with crackers or bread.
- Store leftovers refrigerated in the marinade for up to 5 days.
