Margarita Lime Cake Bars are zesty and sweet with a refreshing tropical dessert twist, perfect for summer gatherings.

  • 1 box white cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/2 cup lime juice (fresh is best!)
  • 2 tbsp lime zest
  • 2 tbsp tequila (optional for margarita vibes)
  • 1/4 cup sour cream (for added moisture)
  • Whipped cream or frosting (store-bought or homemade) for garnish
  • Fresh lime slices for garnish
  • Powdered sugar, for dusting
  • Extra lime zest for that pop

Instructions

  1. In a large bowl, combine cake mix, oil, eggs, lime juice, zest, tequila (if using), and sour cream. Beat until smooth and creamy.
  2. Pour batter into a greased 9×13-inch baking pan. Bake at 350°F for 22–25 minutes or until a toothpick comes out clean.
  3. Let the cake cool completely in the pan. Slice into bars.
  4. Pipe or dollop whipped cream on each bar, top with a fresh lime slice, and dust with powdered sugar and lime zest.
  5. Chill slightly or serve at room temp.

Notes

  • This dessert is perfect for potlucks and summer parties.
  • For a non-alcoholic version, omit the tequila.
