  • 1 lb smoked sausage, sliced into rounds
  • 1/2 lb ground sausage (optional)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cups fresh or frozen corn kernels
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp Cajun seasoning
  • Salt and black pepper, to taste
  • 1/4 cup chicken broth or water
  • 2 tbsp chopped parsley (for garnish)
  • Cooked white rice (optional, for serving)

Instructions

  1. Heat oil in a large skillet over medium-high. Add sliced smoked sausage and ground sausage. Cook until browned.
  2. Add onion, bell peppers, and garlic. Sauté until soft and fragrant.
  3. Stir in the corn, paprika, Cajun seasoning, salt, and pepper. Cook for 5–7 minutes, stirring often.
  4. Pour in chicken broth and simmer for another 5–6 minutes until tender.
  5. Sprinkle with chopped parsley and serve hot over white rice if desired.

Notes

  • For extra spice, add more Cajun seasoning.
  • Frozen corn works well if fresh isn’t available.
  • Serve with crusty bread for a complete meal.
