A sweet and savory one-pan chicken dinner with maple glaze and roasted vegetables.

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1/3 cup pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 lb baby potatoes, quartered
  • 1 cup baby carrots
  • 1 cup Brussels sprouts, halved
  • 1 red bell pepper, chopped
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large skillet or oven-safe pan over medium heat. Sear chicken thighs skin-side down for 3–4 minutes until crispy and golden.
  2. In a bowl, mix maple syrup, Dijon, soy sauce, rosemary, thyme, salt, and pepper.
  3. Toss potatoes, carrots, Brussels sprouts, and bell pepper with a spoonful of the glaze.
  4. Add veggies to a greased baking dish or sheet pan. Nestle chicken on top and brush with glaze. Roast at 400°F (200°C) for 35–40 minutes.
  5. Brush with extra glaze after baking. Sprinkle with fresh herbs before serving.

Notes

  • Use fresh herbs for best flavor.
  • Adjust glaze sweetness by reducing maple syrup if desired.
