Maple Dijon Roasted Sweet Potatoes with Burrata and Walnuts is a cozy and flavorful fall vegetarian dish featuring caramelized sweet potatoes glazed with a sweet-savory maple Dijon sauce, topped with creamy burrata, crunchy walnuts, and fresh parsley.   • 3 large sweet potatoes, halved or chopped
  • 2 tbsp olive oil
  • Salt & cracked black pepper to taste
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 ball fresh burrata cheese
  • 1/3 cup toasted walnuts, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F. Toss halved sweet potatoes in olive oil, salt, and pepper. Roast cut-side down for 25–30 minutes until soft and caramelized.
  2. In a bowl, whisk together maple syrup, Dijon mustard, and apple cider vinegar to make the glaze.
  3. Flip roasted sweet potatoes cut-side up, brush with glaze, and roast for an additional 5 minutes.
  4. Remove from oven and immediately top with torn burrata, allowing it to melt into the warm potatoes.
  5. Sprinkle with toasted walnuts, chopped parsley, and drizzle with remaining glaze before serving.

Notes

  • You can prep the glaze ahead of time for quicker assembly.
  • For extra crunch, add pomegranate seeds or crispy shallots.
  • Serve warm for the best creamy texture from the burrata.
