  • 1 lb (450 g) shrimp, peeled & deveined 🍀
  • 2 tablespoons butter 🧈
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 medium potatoes, diced small πŸ₯”
  • 3 cups seafood or chicken broth
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon smoked paprika
  • Salt & black pepper to taste
  • 1 tablespoon fresh parsley, chopped 🌿
  • Optional: splash of lemon juice πŸ‹

Instructions

  1. SautΓ© the base: In a pot over medium heat, melt butter with olive oil. Add onion and cook until soft. Stir in garlic for 30 seconds.
  2. Build the soup: Add potatoes, broth, paprika, salt, and pepper. Simmer 10–12 minutes until potatoes are fork-tender.
  3. Cream it up: Pour in cream and milk. Reduce heat and gently simmer 3–4 minutes.
  4. Add shrimp: Add shrimp and cook just until pink and tender, about 3–4 minutes.
  5. Finish: Stir in parsley and a squeeze of lemon if using. Taste and adjust seasoning.

Notes

  • Dice potatoes small for faster cooking
  • Don’t overcook shrimp β€” they turn rubbery fast
  • Swap half the cream with coconut milk for a twist πŸ₯₯
