A rich and flavorful Louisiana seafood gumbo with shrimp, chicken, and beef sausage. This classic Creole dish is perfect for family dinners and gatherings.

  • 1 lb large shrimp, peeled and deveined
  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 12 oz smoked beef sausage, sliced
  • ½ cup all-purpose flour
  • ½ cup vegetable oil
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt, to taste
  • 2 tbsp fresh parsley, chopped
  • 4 cups cooked white rice

Instructions

  1. Make the roux by whisking oil and flour in a Dutch oven over medium heat for 20–25 minutes until dark brown.
  2. Add onion, bell pepper, celery, and garlic. Cook for 5 minutes until softened.
  3. Gradually whisk in chicken broth. Add Cajun seasoning, smoked paprika, thyme, bay leaves, Worcestershire sauce, chicken, and sausage. Simmer for 35–40 minutes.
  4. Stir in shrimp and cook for 3–5 minutes until pink. Remove bay leaves.
  5. Serve over white rice, garnished with parsley.

Notes

  • Stir the roux constantly to prevent burning.
  • Adjust Cajun seasoning to taste.
  • Serve with French bread or cornbread for a complete meal.
