Ingredients

1 lb ground beef (80/20 blend, for juiciness)
Salt & cracked black pepper
4 oz lobster meat (claw & tail), cooked & chopped
2 slices sharp cheddar cheese
1 brioche burger bun, toasted
2 tbsp spicy mayo or chipotle aioli
1 leaf romaine or iceberg lettuce
2 slices tomato
1 tbsp butter (for lobster)
Paprika, lemon juice & parsley (for lobster mix)
Instructions
Form ground beef into two loose balls. Heat a griddle or cast-iron pan until sizzling hot. Smash each patty flat and season well. Sear 2–3 minutes per side for that crispy edge smash magic and juicy burger center.
Warm lobster meat in a skillet with butter, a dash of paprika, a squeeze of lemon juice, and a pinch of salt.
While patties finish cooking, lay cheddar on top and let it melt down the sides.
Toast the brioche bun until golden. Spread spicy mayo on both sides. Layer lettuce, burger patties with cheddar, tomato, and then pile on that buttered lobster.
Press the top bun down just enough to feel the juices drip. Serve immediately with fries or onion rings.
Notes
For extra flavor, let the lobster mix sit for a few minutes before adding it to the burger.
Feel free to adjust the spice level of the mayo to your taste.
