2 lobster tails, cooked and chopped
3 cups sweet corn kernels (fresh or frozen)
2 tbsp unsalted butter
1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
2 tbsp all-purpose flour
2 cups seafood or chicken broth
1½ cups heavy cream
1 cup whole milk
½ tsp Old Bay seasoning
½ tsp smoked paprika
Salt and freshly ground black pepper, to taste
2 tbsp fresh parsley, chopped
Instructions
Heat the butter and olive oil in a large pot. Sauté the onion and garlic until soft and fragrant, then stir in the flour and cook for 1 minute.
Slowly whisk in the broth, followed by the heavy cream and milk. Add the sweet corn, Old Bay seasoning, smoked paprika, salt, and pepper. Simmer gently for 12–15 minutes.
Fold in the chopped lobster and let it warm through for 3–4 minutes.
Taste and adjust the seasoning if needed. Simmer just until the chowder is silky and slightly thickened.
Sprinkle with fresh parsley and serve hot with crusty bread or oyster crackers.
Notes
Use fresh lobster for the best flavor.
Adjust seasoning to taste.
Store leftovers in an airtight container in the fridge for up to 2 days.
