- 1 large round sourdough bread bowl
- 1 lb cooked lobster meat, chopped into large chunks
- 2 tbsp butter
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 2 cups seafood stock
- 1 cup heavy cream
- ½ cup whole milk
- 2 tbsp tomato paste
- ½ tsp smoked paprika
- 1 tsp Old Bay seasoning
- ¼ tsp cayenne pepper (optional)
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional)
- Coleslaw, for serving
- Slice the top off the sourdough loaf and hollow out the center, leaving thick walls to hold the filling.
- Melt the butter in a saucepan, sauté the garlic, then whisk in the flour.
- Gradually stir in the seafood stock, heavy cream, milk, tomato paste, paprika, Old Bay, cayenne, salt, and pepper. Simmer until thick.
- Fold the chopped lobster into the bisque along with the cheeses. Stir gently until melted.
- Fill the bread bowl with lobster and pour the bisque over the top.
- Serve immediately with the bread lid and coleslaw.
