10 lasagna noodles
1 tablespoon olive oil
1 pound ground beef or Italian sausage
1 small onion, finely chopped
3 garlic cloves, minced
1 teaspoon Italian seasoning
1 teaspoon paprika
Salt and black pepper to taste
2 cups marinara sauce
1 1/2 cups ricotta cheese
1 egg
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 teaspoon garlic powder
2 tablespoons chopped parsley
1 cup marinara sauce (for topping)
1 cup mozzarella cheese (for topping)
Extra parmesan cheese (for topping)
Fresh parsley for garnish
Instructions
Boil lasagna noodles until al dente. Drain and lay flat on parchment paper with a drizzle of olive oil to prevent sticking.
Cook ground beef or sausage with onion and garlic until browned and fragrant. Stir in Italian seasoning, paprika, salt, pepper, and marinara sauce. Simmer until thick and rich.
In a bowl, combine ricotta, egg, garlic powder, parsley, parmesan, and half of the mozzarella cheese until creamy and smooth.
Spread cheesy filling over each lasagna noodle, add a spoonful of meat sauce, then carefully roll them up tightly.
Place roll-ups seam side down in a baking dish with marinara sauce underneath. Top with extra sauce, mozzarella, and parmesan cheese. Bake at 375°F (190°C) for 25–30 minutes until bubbly and golden.
Sprinkle with fresh parsley and extra parmesan before serving hot with garlic bread or Caesar salad.
