1 packet taco seasoning mix
½ cup water
8 crunchy taco shells
1 cup shredded cheddar cheese
1 cup diced tomatoes
½ cup chopped fresh parsley or cilantro
1 tbsp olive oil
2 tbsp butter (for cheese sauce)
2 tbsp all-purpose flour (for cheese sauce)
1 cup whole milk (for cheese sauce)
1 cup shredded Monterey Jack or cheddar cheese (for cheese sauce)
¼ tsp garlic powder (for cheese sauce)
Pinch of salt (for cheese sauce)
Instructions
In a skillet, heat olive oil and brown the ground beef. Stir in taco seasoning and water, then simmer until thickened.
In a saucepan, melt butter over medium heat. Whisk in flour, then slowly pour in milk, stirring constantly until smooth. Add cheese, garlic powder, and salt.
Warm taco shells in the oven at 350°F for 5 minutes. Fill each one with the savory beef.
Drizzle each taco generously with the creamy cheese sauce.
Add diced tomatoes and chopped parsley for freshness and serve immediately.
