  • 1/4 tsp baking powder

Instructions

  1. In a bowl, beat together butter and sugar until light and fluffy. Add egg, lemon juice, zest, and vanilla.
  2. Whisk together flour, baking soda, baking powder, and salt. Slowly mix dry ingredients into the wet until a soft dough forms.
  3. Chill dough for 30 minutes in the fridge.
  4. Roll dough into balls, then roll each in granulated or powdered sugar.
  5. Bake at 350°F for 10–12 minutes until edges are set and tops are crackly. Cool slightly before serving.
