LEMON PUMPKIN ROLL (NO CREAM CHEESE!)

A delightful light dessert combining the flavors of lemon and pumpkin in a soft, fluffy roll without cream cheese.

Ingredients

  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon salt
  • 3 large eggs
  • ¾ cup granulated sugar
  • ⅔ cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 3 tablespoons powdered sugar
  • 1½ tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.
  2. In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. In another bowl, beat eggs and sugar until thick and pale (about 2 minutes). Mix in pumpkin puree and vanilla, then gently fold in the dry ingredients.
  3. Spread batter evenly into the pan and bake for 12–14 minutes, or until the cake springs back lightly when touched.
  4. Immediately invert the cake onto a clean towel dusted with powdered sugar. Peel off parchment paper and roll the cake up with the towel. Let cool completely.
  5. Whip cold cream, powdered sugar, lemon juice, zest, and vanilla until soft peaks form. Taste and adjust for lemon intensity. Chill until ready to use.
  6. Unroll the cooled cake gently. Spread lemon whipped cream evenly across the surface. Re-roll tightly, wrap in plastic wrap, and refrigerate for 1 hour before slicing.
  7. Dust with powdered sugar before serving. Slice and enjoy with tea, coffee, or a drizzle of light honey glaze.

Notes

  • Roll while warm to prevent cracking.
  • Add a spoonful of lemon curd to the cream for extra zing.
  • Keeps beautifully in the fridge for 3 days — just cover tightly.
