3 ½ cups bread flour
1 tbsp granulated sugar
1 tsp salt
2 ¼ tsp active dry yeast
1 ¼ cups warm water (about 110°F)
2 tbsp fresh lemon zest
2 tbsp poppy seeds
1 tbsp honey
For the Lemon Glaze:
1 cup powdered sugar
2–3 tbsp fresh lemon juice
½ tsp lemon zest
Instructions
Make the Dough: Combine warm water and yeast. Let sit until foamy. Stir in sugar, salt, lemon zest, poppy seeds, and flour. Knead until smooth and elastic, about 8–10 minutes.
Let It Rise: Place dough in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled.
Shape & Boil: Divide dough into 8 pieces. Roll into balls and poke a hole through the center to form bagels. Boil in honey-water for 1 minute per side.
Bake: Transfer bagels to a lined baking sheet and bake at 425°F for 18–22 minutes until golden brown.
Glaze & Enjoy: Whisk powdered sugar with lemon juice and zest until smooth. Drizzle over cooled bagels.
Notes
Use fresh lemon zest for the best flavor.
Boiling gives the bagels their classic chewy texture.
