Ingredients

  • 1/4 cup cornstarch
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra powdered sugar for dusting

Instructions

  1. Cream butter and powdered sugar until light and fluffy.
  2. Mix in lemon juice, zest, and vanilla.
  3. Stir in flour, cornstarch, and salt until a soft dough forms.
  4. Roll into small balls, place on a baking sheet, and bake at 350°F (175°C) for 12–15 minutes.
  5. Let cool slightly, then dust with powdered sugar.
