115 g unsalted butter
240 ml water
1 g salt
125 g flour
4 large eggs
240 ml heavy cream
120 g mascarpone
40 g powdered sugar
30 ml lemon juice
5 g lemon zest
100 g powdered sugar (glaze)
30 ml lemon juice + 15 ml milk
Instructions
Make choux: boil butter, water, salt; stir in flour. Cool slightly, beat in eggs.
Pipe on tray, bake 200°C for 25–30 minutes until golden. Cool.
Whip cream, fold with mascarpone, sugar, lemon juice, and zest. Fill puffs.
