Lemon Dream Custard Squares are fluffy, creamy, and zesty treats that bring a citrus delight to your dessert table.

  • 1 cup crushed digestive biscuits
  • ¼ cup melted butter
  • 397g sweetened condensed milk
  • ½ cup fresh lemon juice
  • 2 tsp lemon zest
  • 3 egg yolks
  • 2 tbsp cornstarch
  • 1 cup milk
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • 2 eggs
  • ½ cup sugar
  • ½ cup yogurt
  • ⅓ cup oil
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Combine crushed biscuits and melted butter. Press into a lined tray and chill for 15 mins.
  2. Cook lemon custard: whisk lemon juice, zest, condensed milk, egg yolks, cornstarch, and milk. Stir over heat until thick. Pour over crust, chill.
  3. Beat cream with sugar and vanilla to stiff peaks. Spread over lemon layer.
  4. Whisk eggs and sugar, add yogurt, oil, vanilla, then flour and baking powder. Spread over cream.
  5. Bake at 175°C for 25 minutes. Cool completely and dust with sugar.

Notes

  • Use Greek yogurt and sugar substitute for a lighter option.
  • Gluten-free flour + xanthan gum makes it allergy-friendly.
