1 cup unsalted butter, melted
2 cups all-purpose flour
1 cup brown sugar
1 tsp vanilla extract
1/2 tsp salt
1 tsp ground cinnamon (optional)
1 can (14 oz) sweetened condensed milk
1/2 cup fresh lemon juice
1 tbsp lemon zest
2 egg yolks
Powdered sugar (for dusting)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment.
In a bowl, mix melted butter, flour, brown sugar, vanilla, salt, and cinnamon until crumbly. Press 2/3 of the mixture into the bottom of the pan. Bake for 10–12 min until lightly golden.
In another bowl, whisk together sweetened condensed milk, lemon juice, zest, and egg yolks until smooth and creamy.
Pour lemon filling over the pre-baked crust. Sprinkle remaining crumble mixture evenly on top. Bake for 20–25 minutes until set and golden on top. Cool completely.
Refrigerate for at least 1 hour before slicing. Dust with powdered sugar and serve chilled.
Notes
Swap lemon for lime or orange for a citrus twist.
Add shredded coconut to the crumble for a tropical touch.
