Silky, citrusy, pillowy, and oh-so-light! Lemon Cream Crepes with Fresh Berries are a delightful treat perfect for brunch or dessert.

Ingredients

  • 1 cup flour
  • 2 eggs
  • 1 ¼ cup milk
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp vanilla
  • Pinch of salt
  • ¾ cup heavy cream
  • ½ cup mascarpone
  • ¼ cup lemon curd
  • 1 tbsp powdered sugar
  • 1 tsp lemon zest
  • Strawberries, raspberries, blueberries
  • Powdered sugar
  • Optional lemon curd drizzle

Instructions

  1. Whisk crepe batter smooth, rest 15 mins.
  2. Heat pan, pour thin batter, swirl and cook 1–2 mins per side.
  3. Whip cream with sugar, fold in mascarpone, lemon curd, and zest.
  4. Fill crepes, fold, top with berries and dust with sugar.

Notes

  • Serve with a sprig of mint or honey drizzle.
  • Try with a side of chilled herbal tea or lemon spritz.
  • Whole wheat flour and Greek yogurt = lighter twist.
  • Use plant-based cream for a dairy-free version.
