LEMON COCONUT SNOW BARS are a delightful combination of bright, buttery lemon bars topped with soft, sweet coconut, creating a tropical treat that is easy to make and perfect for any occasion.

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • ¼ cup fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla extract
  • 1 cup shredded sweetened coconut
  • ¼ cup powdered sugar (for dusting)

Instructions

  1. MAKE THE CRUST: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. Mix flour, sugar, and butter until crumbly. Press evenly into the bottom of the pan. Bake 12–15 minutes or until lightly golden.
  2. PREPARE THE LEMON FILLING: In a bowl, whisk eggs, sugar, flour, lemon juice, zest, and vanilla until smooth and glossy. Pour over the hot crust and bake another 15–18 minutes, until the filling is set.
  3. ADD THE COCONUT MAGIC: Sprinkle shredded coconut evenly over the warm lemon layer. Gently press it in. Bake another 5–8 minutes until the coconut is lightly toasted on top.
  4. COOL & DUST: Cool completely in the pan. Dust generously with powdered sugar to give it that snowy finish.
  5. CUT & SERVE: Slice into squares or bars. Serve chilled or at room temperature — either way, they’ll disappear fast!

Notes

  • For extra creaminess, add 2 tablespoons coconut cream to the lemon filling.
  • Swap lemon for lime for a tropical spin!
  • Keep refrigerated — they’re even better the next day.
