  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 1/4 cup lemon curd
  • 1/2 tsp cinnamon
  • Lemon slices for garnish

Instructions

  1. Preheat oven to 175°C (350°F). Cream butter and sugar, then add eggs, lemon juice, zest, and vanilla.
  2. Mix in dry ingredients alternating with milk.
  3. Bake for 22–25 minutes until golden. Cool completely.
  4. Whip cream and powdered sugar until soft peaks form. Fold in lemon curd and cinnamon.
  5. Layer cake with lemon cream. Top with whipped cream, cinnamon dust, and lemon slices. Chill before serving.

Notes

  • Use Meyer lemons for a milder flavor.
  • Add candied peel for garnish.
  • Serve with vanilla yogurt drizzle.
