300g white chocolate, finely chopped
120ml heavy cream
2 tbsp unsalted butter
Zest of 2 lemons
3 tbsp freshly squeezed lemon juice
½ tsp vanilla extract
Powdered sugar (for coating)
Instructions
In a small saucepan over medium heat, combine heavy cream, lemon zest, and butter. Stir gently until the butter melts and the mixture just begins to simmer. Remove from heat and stir in lemon juice and vanilla extract.
Pour the hot cream mixture over the chopped white chocolate in a heatproof bowl. Let sit for 2 minutes, then stir slowly until smooth and glossy. Cover and refrigerate for at least 2 hours, or until firm enough to scoop.
Once the ganache has set, use a small spoon or melon baller to scoop portions and roll them into smooth balls between your palms. Place the truffles on a parchment-lined tray and chill for 30 minutes to firm up.
Roll each truffle in powdered sugar until evenly coated. Optional: Drizzle with melted white chocolate or roll in desiccated coconut for extra texture and flair.
Notes
For a stronger lemon kick, add a few drops of natural lemon extract.
Keep refrigerated and serve slightly chilled for best texture.
