Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 tsp turmeric
  • 5 cups chicken broth
  • 1 cup shredded cooked chicken
  • 1/2 cup uncooked rice
  • 2 egg yolks
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste
  • Fresh dill or parsley
  • Lemon slices

Instructions

  1. In a large pot, sauté onion in olive oil until translucent. Add garlic, carrots, and celery. Cook until soft. Stir in turmeric.
  2. Pour in broth. Add rice and simmer covered for 15–18 minutes.
  3. Stir in chicken. In a bowl, whisk yolks with lemon juice. Temper with soup ladle, then stir into pot gently (do not boil).
  4. Season and serve hot. Garnish with herbs and lemon slices.

Notes

  • Use jasmine rice for added fragrance.
  • Add spinach or chickpeas for extra nutrients.
  • Serve with toasted pita or lemon herb salad.
