Soft, chewy, and melt-in-your-mouth perfection, these Lemon Caramel Cloud Cookies are a delightful treat that combines the zesty flavor of lemon with rich caramel and a fluffy cloud topping.

Ingredients

  • 115g unsalted butter (softened)
  • 150g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 190g all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 100g sugar
  • 30ml water
  • 30g butter
  • 30ml fresh lemon juice
  • ½ tsp lemon zest
  • 85g white chocolate chips
  • 60g cream cheese
  • 10g powdered sugar

Instructions

  1. In a bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, then mix in flour, baking soda, and salt. Chill dough for 30 minutes.
  2. Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheet and bake for 10–12 minutes until edges are lightly golden. Cool completely.
  3. For the lemon caramel, heat sugar and water in a saucepan until golden amber. Remove from heat, stir in butter, lemon juice, and zest. Let cool slightly until thickened.
  4. For the cloud topping, melt white chocolate and mix with cream cheese and powdered sugar until smooth and fluffy.
  5. To assemble, spoon a little lemon caramel over each cookie, then top with a swirl of cloud cream. Chill briefly to set.

Notes

  • Don’t overbake the cookies — they should stay soft in the center.
  • Use room-temperature cream cheese for a smooth topping.
  • Store in the fridge up to 4 days or freeze without topping for later.
