12 oz elbow macaroni (or any short pasta)
1 lb ground beef
1 ½ cups chopped leeks (white + light green parts)
1 small onion, diced
2 cloves garlic, minced
2 tbsp butter
2 tbsp flour
2 cups milk (whole or 2%)
1 cup beef broth
1 ½ cups shredded sharp cheddar
1 tsp black pepper
Salt to taste
1 tsp Italian seasoning (optional)
Fresh parsley, chopped (for garnish)
Instructions
Cook the macaroni in salted water until al dente, then drain and set aside.
In a large skillet, cook ground beef until browned, then add chopped leeks and onions, sautéing until tender.
Push the beef mixture aside, melt butter in the pan, and whisk in flour to form a roux. Slowly add milk and beef broth while whisking.
Stir in cheddar cheese, garlic, pepper, and seasoning until the sauce is silky and rich.
Fold in the cooked pasta and stir until everything is coated in the sauce. Top with parsley and serve warm.
