¼ cup cocoa powder
½ teaspoon baking soda
½ cup unsalted butter, melted
½ cup brown sugar
¼ cup granulated sugar
1 egg
1 teaspoon vanilla extract
¼ teaspoon salt
½ cup dark chocolate chips
4 tablespoons unsalted butter
¼ cup sugar
2 tablespoons lemon juice
1 teaspoon lemon zest
1 egg yolk
¼ cup condensed milk
Dark chocolate shavings or curls for garnish
Instructions
MAKE THE LEMON FILLING: In a small saucepan, whisk butter, sugar, lemon juice, zest, and egg yolk over low heat until thickened (about 3–4 minutes). Remove from heat and stir in condensed milk until smooth. Let cool completely, then refrigerate for 20 minutes.
PREP THE COOKIE DOUGH: Preheat oven to 350°F (175°C). In a bowl, whisk melted butter, brown sugar, and granulated sugar until combined. Add egg and vanilla, then mix in flour, cocoa powder, baking soda, and salt. Fold in chocolate chips.
SHAPE THE COOKIES: Scoop dough into balls and press a small well in the center of each. Fill with a spoonful of chilled lemon cream. Top with a small piece of dough to seal slightly, leaving some filling visible.
BAKE TO PERFECTION: Place on a lined baking sheet and bake for 10–12 minutes, until edges are set but centers remain soft and gooey. Cool for 5 minutes before serving.
FINISH & ENJOY: Top with chocolate shavings and serve warm for that molten center effect.
Notes
Use chilled lemon curd for thicker filling.
