- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1 lb ground beef
- 1 tsp salt
- ½ tsp pepper
- 1 tsp oregano
- ½ tsp basil
- ¼ tsp red chili flakes
- 2 tbsp tomato paste
- 1 can crushed tomatoes (15 oz)
- 1 can tomato sauce (15 oz)
- 4 cups broth
- 8 oz small pasta
- ½ cup ricotta
- 1 cup mozzarella
- ¼ cup Parmesan
- Chopped parsley or basil (for topping)
- Sauté aromatics: Heat olive oil in a large pot. Cook onion for 3–4 minutes. Add garlic and bell pepper; cook 2 minutes more.
- Brown the beef: Add ground beef and cook until browned. Season with salt, pepper, oregano, basil, and red chili flakes. Stir in tomato paste.
- Build the soup: Add crushed tomatoes, tomato sauce, and broth. Stir well, cover, and simmer for 15–20 minutes.
- Add pasta: Stir in small pasta and cook 8–10 minutes until al dente.
- Serve: Ladle hot soup into bowls. Top with ricotta, mozzarella, Parmesan, and fresh parsley or basil.
Notes
- Use mafaldine or broken lasagna noodles for authentic texture
- Let soup rest 5 minutes after cooking to thicken
- Adjust broth depending on how thick or soupy you prefer it
