Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 lb ground beef
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • ½ tsp basil
  • ¼ tsp red chili flakes
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes (15 oz)
  • 1 can tomato sauce (15 oz)
  • 4 cups broth
  • 8 oz small pasta
  • ½ cup ricotta
  • 1 cup mozzarella
  • ¼ cup Parmesan
  • Chopped parsley or basil (for topping)

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot. Cook onion for 3–4 minutes. Add garlic and bell pepper; cook 2 minutes more.
  2. Brown the beef: Add ground beef and cook until browned. Season with salt, pepper, oregano, basil, and red chili flakes. Stir in tomato paste.
  3. Build the soup: Add crushed tomatoes, tomato sauce, and broth. Stir well, cover, and simmer for 15–20 minutes.
  4. Add pasta: Stir in small pasta and cook 8–10 minutes until al dente.
  5. Serve: Ladle hot soup into bowls. Top with ricotta, mozzarella, Parmesan, and fresh parsley or basil.

Notes

  • Use mafaldine or broken lasagna noodles for authentic texture
  • Let soup rest 5 minutes after cooking to thicken
  • Adjust broth depending on how thick or soupy you prefer it
