1 lb thinly sliced beef ribeye or sirloin
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp brown sugar
2 garlic cloves, minced
1 tsp grated ginger
1 tbsp gochujang (Korean chili paste)
1/2 cup sliced onions
1 cup chopped kimchi
1 cup shredded mozzarella or provolone cheese
2–3 hoagie rolls or sandwich buns
1 tbsp butter (for toasting rolls)
2 green onions, sliced
1 tbsp sesame seeds
Sliced jalapeños (optional, for extra kick)
Instructions
Combine soy sauce, sesame oil, brown sugar, garlic, ginger, and gochujang in a bowl. Add beef and marinate for at least 30 minutes.
In a hot skillet over medium-high heat, cook the beef and sliced onions until caramelized and tender.
Add the chopped kimchi into the skillet and stir-fry with the beef for 2–3 minutes.
Toast the hoagie rolls with butter until golden. Pile the meat and kimchi mix onto the bread, top with shredded cheese, and broil for 1–2 minutes until melted.
Sprinkle with green onions, sesame seeds, and jalapeño slices if desired.
