  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup buttermilk
  • ⅓ cup fresh lime juice
  • Zest of 2 limes
  • 1 teaspoon vanilla extract
  • 250 g cream cheese, room temperature
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ⅓ cup sweetened condensed milk
  • ¼ cup fresh lime juice
  • 1 tablespoon honey or sugar
  • Lime wedges
  • Fresh mint leaves
  • Toasted coconut or crushed biscuits

Instructions

  1. Preheat oven to 170°C / 340°F. Line an 20 cm square pan or round cake pan with parchment.
  2. Whisk flour, baking powder, baking soda, and salt.
  3. Beat butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix in lime juice, zest, vanilla, and buttermilk.
  5. Fold in dry ingredients gently.
  6. Bake 30–35 minutes until a toothpick comes out clean. Cool completely.
  7. Beat cream cheese until smooth. Add powdered sugar and vanilla.
  8. Whip cream to stiff peaks and fold into cream cheese mixture.
  9. Spread cream over cooled cake. Chill 30 minutes.
  10. Heat condensed milk, lime juice, and honey gently until smooth. Cool slightly and drizzle generously over the cake.
  11. Garnish with mint, lime slices, and crunchy topping.
