2 cups shredded Swiss cheese (or mozzarella for variation)
8 slices deli corned beef or pastrami
½ cup sauerkraut, drained well
¼ cup sugar-free Thousand Island or Russian dressing
Chopped parsley (optional garnish)
Cooking spray or parchment paper
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment or use a silicone mat. Place small mounds of shredded cheese (about ¼ cup each) spaced out.
Bake for 6–8 minutes until bubbly and edges turn golden brown. Let cool 1 minute before filling.
While cheese is still pliable, add a slice of corned beef, a little sauerkraut, and a drizzle of dressing to the center.
Gently roll each cheesy disk into a log while warm. Press seam-side down to seal.
Sprinkle with chopped parsley and serve with extra dressing for dipping.
Notes
For a different flavor, use mozzarella cheese instead of Swiss.
Make sure to drain the sauerkraut well to avoid excess moisture.
