1 lb ground beef (85/15 or leaner)
1 tbsp olive oil
1 tbsp taco seasoning
Salt & pepper to taste
1½ cups shredded cheddar cheese
1½ cups shredded mozzarella cheese
2 large eggs
¼ cup almond flour
½ tsp garlic powder
½ tsp onion powder
1 Roma tomato, diced
¼ cup sour cream
Fresh chopped cilantro (for garnish)
Optional: jalapeños, hot sauce
Instructions
In a skillet, heat olive oil and cook ground beef with taco seasoning until browned.
Preheat a non-stick pan. Mix cheddar, mozzarella, eggs, almond flour, garlic powder, and onion powder into a batter. Spoon into rounds and cook until golden.
Lay out your cheesy shell and layer it with cooked beef, diced tomatoes, and sour cream.
Fold the wrap and return to skillet for 1–2 minutes per side to crisp up.
Top with fresh cilantro, sliced jalapeños, or hot sauce before serving.
Notes
Use lean ground beef for less grease.
Adjust spice level with more or less taco seasoning.
Store leftovers in an airtight container for up to 2 days.
