  • 1 chuck roast (about 34 lbs)
  • 1 packet onion soup mix
  • 1 packet Italian dressing mix
  • 1 packet brown gravy mix
  • 1/2 cup water
  • 1 lb baby potatoes, halved
  • 1/2 lb carrots, peeled and cut or use baby carrots
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a small bowl, combine the onion soup mix, Italian dressing mix, and brown gravy mix with water. Stir until smooth.
  3. Place the roast in a large baking dish or roasting pan. Surround with potatoes and carrots.
  4. Pour the mixture evenly over the roast and vegetables.
  5. Cover tightly with foil and bake for 3–3.5 hours, or until the beef is fork-tender.
  6. Remove from oven, let rest for 10 minutes. Slice and serve with the gravy spooned on top.

  • For extra flavor, sear the roast on all sides before baking.
