A creamy and spicy beef stew inspired by jalapeño poppers, perfect for a comforting meal.

Ingredients

  • 2 lbs beef stew meat, cubed
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 ½ cups beef broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 jalapeño, sliced (plus extra for garnish)
  • 1 red bell pepper, diced
  • 1 block (8 oz) cream cheese
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped cilantro (optional, garnish)

Instructions

  1. In a skillet, sear beef cubes in olive oil with salt, pepper, and paprika until browned.
  2. Add onions, garlic, cumin, and bell peppers to the skillet and sauté for 2–3 minutes.
  3. Transfer everything to a crockpot. Add beef broth, corn, and jalapeños. Cook on low for 6–7 hours or high for 3–4 hours.
  4. One hour before serving, stir in cream cheese and cheddar until melted and creamy.
  5. Ladle into bowls, garnish with fresh jalapeño slices and cilantro. Serve with crusty bread or over rice.

Notes

  • Adjust the spiciness by adding more or fewer jalapeños.
  • For a thicker stew, you can add a cornstarch slurry before serving.
  • This stew can be made ahead and reheated for an easy meal.
