- 2 lbs beef stew meat, cubed
- 1 tbsp olive oil
- Salt & pepper to taste
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 ½ cups beef broth
- 1 cup corn kernels (fresh or frozen)
- 1 jalapeño, sliced (plus extra for garnish)
- 1 red bell pepper, diced
- 1 block (8 oz) cream cheese
- 1 cup shredded cheddar cheese
- 2 tbsp chopped cilantro (optional, garnish)
- In a skillet, sear beef cubes in olive oil with salt, pepper, and paprika until browned.
- Add onions, garlic, cumin, and bell peppers to the skillet and sauté for 2–3 minutes.
- Transfer everything to a crockpot. Add beef broth, corn, and jalapeños. Cook on low for 6–7 hours or high for 3–4 hours.
- One hour before serving, stir in cream cheese and cheddar until melted and creamy.
- Ladle into bowls, garnish with fresh jalapeño slices and cilantro. Serve with crusty bread or over rice.
Notes
- Adjust the spiciness by adding more or fewer jalapeños.
- For a thicker stew, you can add a cornstarch slurry before serving.
- This stew can be made ahead and reheated for an easy meal.
