- 1/2 lb large shrimp, cooked & peeled
- 1/2 lb sea scallops, cooked & halved
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata or black olives
- 1/2 cucumber, chopped
- 1/4 red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- 1 tbsp capers (optional)
- Juice of 1 lemon
- 3 tbsp olive oil
- 1 garlic clove, minced
- Salt & black pepper to taste
- Lightly poach shrimp and scallops until tender, then chill.
- In a bowl, combine lemon juice, olive oil, garlic, salt, and pepper.
- In a large bowl, mix shrimp, scallops, tomatoes, cucumber, olives, onions, capers, and parsley. Pour over dressing and toss to coat.
- Cover and refrigerate for at least 30 minutes.
- Plate it over greens or with crusty bread. Drizzle with extra lemon if desired.
Notes
- This salad is perfect for summer gatherings and can be made ahead of time.
- Feel free to add other seafood like calamari or mussels for variety.
- Adjust the seasoning to your taste preference.
