Italian Seafood Salad: A Refreshing Summer Delight!

A bright, refreshing seafood classic made for summer cravings!

Ingredients

  • 1/2 lb large shrimp, cooked & peeled
  • 1/2 lb sea scallops, cooked & halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata or black olives
  • 1/2 cucumber, chopped
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp capers (optional)
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • 1 garlic clove, minced
  • Salt & black pepper to taste

Instructions

  1. Lightly poach shrimp and scallops until tender, then chill.
  2. In a bowl, combine lemon juice, olive oil, garlic, salt, and pepper.
  3. In a large bowl, mix shrimp, scallops, tomatoes, cucumber, olives, onions, capers, and parsley. Pour over dressing and toss to coat.
  4. Cover and refrigerate for at least 30 minutes.
  5. Plate it over greens or with crusty bread. Drizzle with extra lemon if desired.

Notes

  • This salad is perfect for summer gatherings and can be made ahead of time.
  • Feel free to add other seafood like calamari or mussels for variety.
  • Adjust the seasoning to your taste preference.
