1 tbsp olive oil
1/2 onion, finely chopped
2 carrots, diced
2 celery stalks, diced
4 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp turmeric
6 cups chicken broth
1 cup arborio rice (or orzo)
2 cups cooked, shredded chicken
1/4 cup grated Parmesan
1 tbsp lemon juice (optional)
Salt & black pepper to taste
Chopped parsley & extra Parm for garnish
Instructions
In a large soup pot, heat olive oil over medium. Add onion, carrots, and celery, cooking until softened. Stir in garlic.
Sprinkle in Italian seasoning and turmeric. Pour in chicken broth and bring to a low simmer.
Stir in arborio rice and let it gently simmer, stirring occasionally, until creamy and thick.
Add shredded chicken and Parmesan cheese. Stir until melty and luscious.
Optional: Add a splash of lemon juice. Top with parsley and more Parm. Serve hot.
Notes
Rotisserie chicken works great for convenience.
Feel free to substitute orzo for arborio rice for a different texture.
